CLASSIC BASIL PESTO
Ingredients
2 cups fresh basil leaves, packed
1/3 cup pine nuts
2 garlic cloves
1/2 cup grated Parmesan cheese
1/2 cup extra virgin olive oil
1/4 tsp salt
Freshly ground black pepper, to taste
Instructions
In a food processor, combine the basil, pine nuts, and garlic. Pulse until finely chopped.
Add the Parmesan cheese and pulse again.
Slowly pour in the olive oil while blending until the pesto becomes smooth and creamy.
Season with salt and black pepper to taste.
Serve with pasta, spread on sandwiches, or use as a dip.
Tips
Lightly toast the pine nuts for a deeper flavor.
Store in the refrigerator with a thin layer of olive oil on top to keep the pesto bright green.
